Fall Festivities

cora-and-katie-017For some of you fall seemed to start a few weeks ago, and for others like us at Globe Aware HQ in Texas, it has only just begun! This is a great time to be with the ones you are close to. Here are a few activities you and your friends/family can all do together:

Schedule to volunteer time at your local Habitat for Humanity
There is always an opportunity to volunteer. It is great for all ages and sizes. Look up some local volunteer opportunities and join in! Kids enjoy volunteering, too and it is a great opportunity to learn that there is always time to help someone or something.

Travel
If you don’t have school to consider, it’s a great time for travel. October is when fares tend to be their lowest (and in February, too).

The Local Fair
Just before the weather gets too brisk, make your way to your local fair! It’s a perfect place to bring your kids and see them enjoy themselves on all the rides. It is also a great place for parents and friends to catch up with each other. The local amusement park is an easy going yet affordable attraction that a lot of families enjoy going to.

Pumpkin Patch Hunting
What more idealistic way to represent this Fall than with a pumpkin patch adventure! Bring your family to pick out small and large pumpkins. This year try going with an untraditional orange pumpkin and go for a more uniquely colored pumpkin.

Puzzling
If it gets too cold outside and you just want to stay in, try making a puzzle. It gets you away from binge watching Netflix or your favorite TV show and allows you to focus on your creative side. Hint to completing your puzzle: find all of the boarder pieces and separate those from the inside puzzle pieces. All of these activities are fun, easy going and makes you even more eager for the Holidays to come around!
 

REMEMBER: Start saving now for spring and summer travels! Never hurts to plan ahead!

Help an Emmy Award winning program raise awareness of poverty in Guatemala!

Will you help? Emmy award-winning husband and wife documentary team, who covered Globe Aware’s program in Cambodia on PBS public broadcasting last year, will profile Globe Aware’s program in Guatemala in order to raise awareness about the region's ongoing social and economic challenges.

Globe Aware will donate field and ground costs and the documentary team will donate production costs, but we need to raise $8,000 to cover getting the team and equipment to Guatemala.

Globe Aware’s International Specialty!

OCT2014_makingblackbeansFrijoles Volteados, also known as Black Beans, Flipped.

We wanted to share with you a Guatemalan recipe from A Harmony of Flavors.

This is a common side dish in Guatemala. It is very easy to make and it is full of protein which is good for your body! (This recipe serves 8 to 10 people)

What you’ll need:
  • 1 pound black beans, picked over to remove any stones or dirt, rinsed well
  • 1 onion, chopped
  • 2½ - 3 teaspoons salt
  • 2 - 4 tablespoons oil, lard or bacon fat for frying
Place washed beans in a large pot with water to cover them by at least 2 inches.
Roughly chop the onion and add to the pot. Garlic may also be added if desired.
If Apasote / Epazote is available, use the younger tips of the plant. Bring pot to boil, reduce to a simmer, cover and cook beans for 2 to 3 hours, or until tender and falling apart. Add salt once cooked. Put the beans through a food mill, food processor or blender until smooth. Now you have pureed beans, or Frijoles Colados. At this point you may proceed to the making of the Volteados, or you may first fry some onion and garlic until golden brown and add the liquified beans into the pan to meld flavors for a few minutes.

To make the Volteados, you may use all the beans just made, or only a part; it works the same. This can also be done with canned black beans, if desired. It is best to use a wooden spoon to cook and stir down the beans.

blackbeansoct2014Volteados depend on the liquid being quickly evaporated and the beans coming to a solid mass, able to be flipped from side to side in the pan and then onto a serving plate.
  1. Heat a large (preferably nonstick) frying pan and put in some oil, lard or fat to heat. Place beans in pan; depending on how runny they are will determine the time it takes to cook them down - 15 to 30 minutes.
  2. Over relatively high heat, stirring constantly so they do not burn (there is nothing worse than burnt beans!) cook and you will note that the pan begins to show through the scraping while cooking.
  3. More and more the beans will clump together as liquid is evaporated out.
  4. The beans start to pull together with the spatula.
  5. The beans are now practically following the spatula around the pan as you stir.
  6. The beans begin drying quickly now.
  7. The beans have completely come together in one clump.
  8. Now begin to lift the pan on one side so the beans flip themselves over in one solid mass to the opposite side of the pan. This may have to be repeated once or twice to get them together properly. Then, flip the beans out onto a serving plate.

Serve with French bread or tortillas, or even tortilla chips, depending on the time of day and reason for serving.

You can add Cotija Cheese and Parsley for a yummy finished look.
